Parmesan Roasted Broccoli

Throughout Grays life I have battled against him and others, (imagine everyone giving into his sweet smile and letting him go on pizza alone…) to get him to eat his vegetables! Finally, through shear determination and blind will I have started winning! I was really only having one “problematic veggie” that I just couldn’t get him to go for, the dreaded Broccoli!

I tried it steamed, I tried it raw, I tried it in casseroles and even tried hiding it in foods-all to no avail.
Until….

Enter in, ROASTED to a crunchy perfection-Parmesan Roasted Broccoli!

Ladies and Gents we have a WINNER WINNER CHICKEN, err… Broccoli? DINNER!

Here is the “recipe”!
two medium sized heads of FRESH broccoli, cut into florets and rinsed
Coconut Oil Spray (Spectrum has a good one)

Get a large bowl and spray the bowl with the coconut oil spray liberally. Add the Broccoli and toss to coat it.

This is where it gets “Hard”- I don’t measure anything and it really comes down to personal preference, but I assure you it is practically impossible to mess it up! I add:

Parmesan, 1-2 servings
garlic powder
Pepper
Salt
1 Packet Stevia
Onion Powder
Italian Seasonings
ALL to Taste.

I just start adding it to the broccoli until it seems like it is good. I taste test it raw until I like it and then throw it in the oven!

Use a parchment lined flat baking sheet or a jelly roll pan. Bake at 425 for about 20-30 minutes and then toss around with a spatula, then bake again until it is crispy. Like Crispy. Again, that will be personal preference. Gray tends to like his a little burnt, with a little reduced sugar ketchup for dipping.
I like mine a little less burnt BUT it doesn’t really matter, he rarely saves me any anyway!
