Mini Meatloaf!

One Blender Mini Italian Chicken Meatloaves

  • 1-1.5lb chicken breast, fresh (this was two large breasts for me)
  • ½ jar Organic low sugar Marinara sauce (I use Simply Nature Marinara from Aldi)
  • ½ cup cottage cheese
  • 1 whole egg
  • 1/3 cup Oatmeal
  • 1 tbsp. Italian seasoning
  • ¼ cup fat free cheddar cheese, or cheese of choice
  • ¼ cup Pizza blend white cheese (mozzarella/provolone mix is what I used)
  • Parmesan- 1 serving Pepper- to taste Salt – to taste Garlic Powder-to taste

Preheat the oven to 350 degrees.

  1. Process the chicken in the blender until ground

2.Add the remaining ingredients (EXCEPT THE PIZZA BLEND WHITE CHEESE) and blend until mixed

3.Divide between three mini (or use 1 large pan) loaf pans

4.Top with more marinara, a little parmesan and Italian seasonings and white cheese blend

5.Cover with foil and bake for 40 minutes

6. Uncover and bake for an additional 10 minutes or until cheese is bubbly, serve with additional marinara!
