Clean Sweep of the Week-Peach Cobbler

My own mother is trying to set me up for failure I think! This seemed a little tricky, BUT I tackled it anyway.

Check out the original recipe (I have no link-she sent this to me)

1 1/2 cups sugar

1 cup flour

1 1/2 teaspoons baking powder

3/4 cup milk

1 can (30 ounces) sliced peaches in syrup

1 teaspoon cinnamon

1/3 teaspoon nutmeg

1. Preheat oven to 350 degrees. Melt butter (it doesn’t say how much) in 9 x 13 casserole dish. Separate half cup sugar, all of cinnamon & nutmeg. Separate peaches from syrup.

2. Mix 1 cup sugar and the other dry ingredients together in a bowl.

3. Stir in milk & syrup from peaches. Put peaches in casserole dish with melted butter. Pour batter over the top of peaches. 4.Mix cinnamon, nutmeg & 1/2 cup of sugar mixture and sprinkle over top of batter.

5.Bake for 45 minutes to 1 hour or until top crust is golden brown

The picture looks divine! But those macros look insane….now let’s take a look at mine!


Cleaned up Peach Cobbler

1/3 cup stevia plus 1/8 cup stevia

½ tsp salt, to taste

3/4 cup oat flour plus 30g almonds ground almond flour)

1 1/2 teaspoons baking powder

¼ cup unsweetened almond milk,

1 serving sugar free syrup

¼ cup peach juice

24 ounce jar no sugar added peaches

1 teaspoon cinnamon

1/3 teaspoon nutmeg

1.Mixed all the dry except the cinnamon, nutmeg and 1/8 cup stevia in a bowl

2.Separated the peaches from the juice, reserved 1/4 cup of the juice

3.Sprayed a 8×8 dish heavily with olive oil spray and coconut oil spray

4.Placed peaches in dish

5.Mixed all the liquids together and then add to the dry, mixing well and then pour on top of peaches (pour all over)

6.Mixed the cinnamon, nutmeg and 1/8 cup stevia together, sprinkled over the top (I didn’t use it all but you might)

7.Baked at 350 for 30/40ish minutes (It’s going to depend how done you like your topping)

I turned the heat up to 375 the last 5 minutes and I would do that again.

Even if mine doesn’t look as pretty, it was pretty darn good and the boys ate it up so fast I didn’t even have any to share! That’s a WIN in my book!
