The 7 Stages of Understanding

My first thoughts as I wandered the aisles of the grocery store were simple and innocent enough. “I haven’t made a dessert in awhile” “A cookie sounds amazing” “I wonder what I can find on the baking aisle…”

The pressure I feel is almost comical. I am probably considered one of the foremost “health nuts” in my small little community. I don’t eat sugar, processed foods, fruit, grains, starch of any kind and I turn my nose up at many of the artificial sweeteners that are commonly used, such as: Splenda, Equal, Sweet N Low, Malitol, and Xylitol (and this is by no means an exhaustive list). BUT MAN, I want something sweet!… But no sugar, no starch and definitely no fake food….and people watching me will expect nothing less than that.

So, I find myself on the baking aisle. I already know what I will find. But there is a new addition to the shelf. Pyure, an organic stevia blend meant for baking. Stevia is a sweetener I really have no qualm with. If you get it in the proper form (liquid extract that you typically only find at health stores) you have your hands on one of the most natural ways to sweeten foods, only behind buying a stevia plant and dipping the leaves into your tea (which you can totally do if you happen to not be a plant mass murderer like mua). Promising to not impact blood sugar or insulin, Pyure and Swerve are quickly becoming the most popular alternative sweetener to regular sugar.

And with claims like that I am intrigued but skeptical,
The mental argument that ensued should be added to the local TV stations daytime soap opera.

The ideas for everything I could do with it ran wild. I made cookies, no bakes, barks, brownies, pies, whipping cream  (all LC, no added sugar, GF, LCHF).

I am pretty sure I was out of the bag in less than 2 days and I found myself braving Wal-Mart again just to get more.

 

Whoa… what happened here?

 

This pattern ensued for a little while longer before something dawned on me.

One little trigger for a “little treat” had turned into a insatiable appetite for a little something to eat, a little sweet treat. Just a “little”.

My appetite hadn’t been this high for sweets in many many moons.

And that was the start of what I am going to call the The 7 stages of understanding (much like the seven stages of grief).

  1. Appalled
  2. Angry
  3. Depressed
  4. Acceptance
  5. Education
  6. Resilience
  7. Enlightenment

 

I went from being aghast with my actions , to angry that I had let myself continue, then sad that I did it, to accepting I did, correcting the actions through education, then overcoming all of the negative to end with some peace.

 

…all over a little bag of sweetener.

If you could see me right now, I would be shaking my head.

 

Here was my problem.

While, maybe my blood sugar was fine, I think the erythritol messes with your Leptin and Gherlin hormones a little too much for my liking.

 

Lept, Gherli-What?

Yes, these little guys are your dietary hero and villain.

Leptin being your satiety hormone (“hey, dude, you have had enough-knock off the meat platter”).

Gherlin being the “gremlin” that attacks your mental fortate with an overwhelming persuasive chant of “feed me, feeeeed mee more, FEEEEEEEED MEEEE”-you get the idea.

So let this be a little warning to my friends. Whether you are trying to limit your carbs, cut your processed foods, eat a more “natural” plate, or just stop eating out; the good angel always has your best interest at heart. And if it sounds too good to be true?.. It probably is.

Perfect Keto Chocolate Cinnamon Roll Scones

Long time no recipe guys!!! Between podcasting, starting my new company    and blazing through life like I’m living on rocket-fuel it’s been a tad busy!

BUT… I managed to make a BOMB breakfast for the boys the other morning and I wanted to share!

I am loving the Keto WOE and getting creative when it comes to treats is my “bacon and butta’ “!

This recipe uses a special little ingredient, Grass Fed Collagen Protein. While Collagen isn’t the best muscle building protein, the amino acids are specifically great for joints, ligaments, tendons, healthy hair and tissues. And this protein cooks up without causing dryness like Whey can and also has added MCT (medium chain triglycerides) to give you even more high performing fat burning fuel!

Perfect Keto Chocolate Cinnamon Roll Scones

Scone Base (will be divided)
>3 cups of shredded Mozzarella Cheese, divided (1.5 cups each)

>1.5 cups of Almond Flour, divided (generous ¾ cup in one, scant ¾ cup in another)

>1 scoop Perfect Keto Collagen plus MCT protein powder

>4 Tablespoons of Cream Cheese

>2 tsp cocoa powder

> liquid stevia extract to taste (I used 1 dropper full for entire recipe)

> 1 tbsp Baking powder, divided

Filling 1

>1 Tablespoon of Cinnamon

>2 tbsp butter, softened

>2 tsp powdered sweetener such as Swerve

 

Filling 2

>2 tbsp low sugar all natural peanut butter

>2 tsp coconut oil

> 1/4 tsp maple extract, optional

>1 serving lily’s sugar free chocolate chips

 

 

Glaze

– 2 Tablespoons of cream cheese, softened

> ¼ tsp – ½ tsp maple extract, optional (to taste)

> 4 drops liquid stevia, to taste

>1/2 tbsp butter, softened

 

Instructions

  1. Preheat oven to 350. Seperate out the cream cheese and mozzarella cheese into two separate bowls. Divided the almond flour as described above. In the scat ¾ cup almond flour add a scoop of Perfect Keto Collagen plus MCT and ½ tbsp. baking powder and 2 tsp cocoa powder. In the other add in ½ tbsp. baking powder. Stir both well.
  2. In a large bowl, melt first divided mozzarella cheese and cream cheese in microwave for 30 seconds. Stir and if stringy, microwave for another 30 seconds. Stir. Continue this process until melted and of a doughy consistency.
  3. Add in almond flour, and stevia drops mixing in until dough consistency is reached again. Roll into a ball and set aside.
  4. Repeat the above instructions with the remaining cheese, cream cheese mixture, adding in the almond flour, Perfect Keto and cocoa powder mix.
  5. Spread dough 1 out into a rectangle being careful to not to flatten it out too thin, you want to be able to roll it easily.
  6. Spread the softened butter over the top of the crust. Sprinkle cinnamon, sweetener, evenly over the dough.
  7. Carefully, roll up, lengthwise, into a log. Set aside.
  8. Repeat steps with dough 2, spreading into a rectangle.
  9. Then melt peanut butter, coconut oil and maple extract in microwave for 15 seconds. Stir. Spread over the surface of the dough. Add in the chocolate chips placing throughout the dough. Carefully, roll up, lengthwise, into a log.
  10. Place both logs next to each other and carefully braid them together, then turning into a circle. (this picture below was taken AFTER baking)

20170713_10304411.Bake for 20 minutes, approx… PLEASE WATCH CLOSELY! Oven temperatures and altitudes cause a variation. Take out, and let cool for 5 minutes.

12.Glaze as desired and cut into 8-10 equal sized scones. Enjoy!
